I don't like giving each player full xp as I think that is too quick but doing gold xp has sped it up a lot.

I whole-heartedly endorse Blazeguard's approach, and use both these approaches in my own games. I'd rather hand out a bit more experience for the monsters to speed things along somewhat than hand out large amounts of treasure that needs to be dealt with in-game.
The idea of starting at a higher level - 2nd, 3rd, whatever is a good one too - especially if you will only be playing a limited number of sessions. With limited playing time, your players will appreciate jumping in with somewhat more powerful PCs and getting more spells or improved abilities from the get-go.
