Hi all:
First of all, I just discovered this game a week ago and love it. I've been playing with my family and ordered all the books available on Amazon (cheaper than printing, to be honest.) Thanks for all the efforts!
This is probably a newbie question, but certain monsters have multiple sets of dice for damage, like this for example: 1d3/1d3/1d3
What does this mean? What should I do when the monster hits succesfully?

Alright I have figured out it is related with the number of weapons or claws/bites a creature may have. As in #At 2 claws, 1 bite 1d4/1d4/1d6... Got it! Now can these attack multiple players in the same time? If a creature may attack multiple players at once would they make damage for a die for each of them? Not sure if this is possible and if I'm overthinking it!

Most monsters with natural attacks like the claw and bite will focus on one character. If it might attack multiple characters it would probably be mentioned in the monster's description.
It is usually left to the GM's decision about how and who the monster attacks but just be consistent in that decision. Don't have a black bear paw swipe two different opponents and bite a third in the same round. It would probably maul or attempt to maul one opponent then move to attack another the next round. Now you could toss that out the window with intelligent creatures such as a Dragon. They are intelligent enough to formulate a strategy or an attack plan when dealing with opponents.

Yeah. I would use the Dragon as the exception that proves the rule on that one. They're the titular monster of the rules BFRPG pay homage to, after all. They're fearsome and intelligent foes. The archetypal blend of cunning and bestial. A Dragon will crush your Halfling Thief (not as good a burglar as he would have hoped) with its tail while biting your Dwarf Cleric.

The point I was trying to make is that intelligent monsters will more than likely be careful in how they attack and who they attack. Animal or unintelligent monsters will tend to focus all their attacks on their current opponent or the current one in front of them. This is not always the case but the usual one.

Also remember to check for Morale as needed.
