I don't have any of the Elder Scrolls soundtracks (yet), but Jeremy Soule also composed the soundtrack for Guild Wars, which I forgot to include in my list.

Just going to play it through youtube. I find it funny that I picked on or two things from peoples lists but I just took things from my own experience (games I've played ect). I like the two steps from hell stuff and other stuff in similar vein but I can't sound a bit too epic for my taste.

I never thought the words "too" and "Epic" could be combined in that way.

It seems to defy logic

To epic for sitting in a desk drawing maps and writing room descriptions. Also, it seems to lack peril for my tastes. Seem more new school "yeah we are all epic heroes doing awesome stuff" compared to a "oh crap there is a big monster there and it's going to kill us" attitude. That music would be very inappropriate to be played in a game because a PC may die and it wouldn't be very fitting.

speaking on what can be found via youtube, this is some great background mood music from the game, Arcanum of Steamworks and Magick

Riven and Myst has some of the coolest music I've ever heard
