moving silently for more than one action/round/turn is going to being very dependent on the DM. If there are 7 dogs why should the thief only roll once. Perhaps all 7 dogs should get a shot at hearing him/her. After all, the party can take as many listens as they have people to listen.

I prefer one roll with a bonus if moving at 1/2 mov and a penalty if he needs to exceed his mov per round, the amount of "listeners" and how sharp their senses and state of mind are. If he fails I'd roll to see how many dogs awakes.
(I know this sounds like using lots of mods on the fly but they are "mental mods" that let me calculate the approx chance of success).

I don't think its a lot. Thats what DMs are supposed to do. make a judgement call on the difficulty then set a bonus or penalty.

Yeah, I prefer stopping the game for 2 minutes while I make some notes instead of stealing game time with countless extra rolls.

Though the rules don't specifically say for every monster type, you should feel free to put a few coins in the pockets of any monster you see fit.
Don't depend on the dice for everything. Otherwise, you could be replaced with a computer...

Well, of course. Just that lair treasure means, well, the treasure collectively possessed in the lair.

I agree with Solomoriah and don't feel the need to stick with coins, try jewelry and trinkets. In one game, I put a magical anklet on a ghoul and the party forgot to search it after killing it. They threw the deceased ghoul into a fire to burn it and destroyed the anklet. Another ghoul had a gold circlet on it's head which gave a clue to one of the characters about where and what this person was before they got turned into a ghoul. Treasure can be used as a lead to another adventure later on. Look at what happened to Bilbo Baggens when he found the ring (that is treasure) and how it lead to the adventure that Frodo took.

Gnomes... I'd toss a couple small gems and a few silver in, just so they have a little something.

You can even be creative in that the gnomes use gems in lieu of actual coinage. One might find certain stones/gems that are their "Coppers" or whatever. When bringing the haul back to other lands, there might be some exchange issues to deal with... certain such stone/gem values higher than normal exchange rates and others less favorable when trying to exchange.
Just adds more to the role-play end of the game.
