I'm running a social game night(instead of a dungeon crawl) and I want to use the gambling ring as a hook. They need to find it for some reason. Maybe for fun or to blackmail someone to stop having to pay the treasure tax. Then once that is done I want to use the first rumour in the module. Has anyone written an adventure for under morgansford which is where I want to put that area of study.

I've found gambling in-game to be a distraction, and not terribly adventurous, in my games. Your mileage may vary. As for designing your own dungeons, I don't know offhand where you'd find a tutorial. We all learned the hard way, I'm afraid. I do recommend starting small and using the random generation technique to start with. Don't treat the random rolls as gospel, though... after rolling up your dungeon, change anything you don't like. A random dungeon usually has little character to it, so you do need to add a human element to the design to make it interesting.

There is a random dungeon stocker in the tools on this site. Go to http://basicfantasy.org/tools.html and look for it there.

The 1981 basic D&D book taught you how to build a dungeon.

I don't really have any tips for building a dungeon from scratch but I just came across this site tonight that might give you some ideas for maps - http://paratime.ca/cartography/index.html.
The problem with doing something really stupid to impress people is that they may just be impressed by how stupid you really are.
