Its not say you have to stick to 1 HD creatures. I generally run 5-7 players. They have taken on Ogres, groups of Orc's, etc. It was extremely high risk, however they had good planning, used range to their advantage, and confining spaces.

After a fight, players have to evaluate their character's situations; if they feel they are in good enough shape, they can move on, but if not they should try to get to a place of safety and rest. Sometimes the dice are kind to you, sometimes they aren't. But as a GM, expect an average of just a bit more than one encounter per day.

Rest and Place of Safety are key concepts here.

First level characters without healing spells might need a bit more than rest.
Intelligent monsters will not let players rest on their door step and the road back to the base might not be free from danger.

I choose to be kind with the random encounters.
I give the players some circumstantial advantage.
