I would go with several pantheons. Just looks better. Do a history of the world according to each civilization.

Here's a list of races (human, Demi-human, and humanoid) that I would use. I would cut some races out, just to make it simpler.
Human
Elf
Dwarf
Halfling
Gnome
Half-Elf
Goblin
Hobgoblin
Bugbear
Ogre
Orc
Half-Orc
Kobold
Minotaur
Mermaid/Merman
Giants (several types)

That's a big list! I'd restrict the playable race list to 8, personally, though 6 or 7 is fine. The rest of the races would get maybe a paragraph or two, mostly to carry the whole 'they are your enemy' thing and a little detail.
Totally agree there should be a few 'pantheons'. And remember, culture and faiths are often shaped by the peoples history and environment (A race living in the cold and under attack by giants will be radically different from coastal fisherman who deal peacefully with the local mermaids).

Not all of those races would be playable. Only the good ones.

No. The original question might still be of interest, and in any event it will fall from the front page if it doesn't receive any love. There's no point to locking it.
I lock threads that need locking, not just ones where I personally see no point in continuing... so there's no need to ask me about locking a thread unless it's the scene of a raging troll war.
