If the sentence gives the slug as a group or multiple, the former is correct; if the slug is singular, should be "larger than an ox." Oxen is plural.

The bite inflicts poison with a -3 save, but should it inflict some damage as well with those "spiked and razor sharp mandibles"? Maybe at least 1d4? And what is the effect of the poison? Is it lethal?
Eating the thing should probably result in death if the -5 save is failed, but maybe there should be some partial effect to passing the save, like a few rounds of retching or dizziness or something?

IIRC normally a poison with no specifics its a "save or die" poison, only poisons with specific rules get the full effect description

I'd go with the former as it has 6 attacks and possibly some other potion-like ability.
