I just feel that playing a fantasy game is supposed to let us escape reality. My goal as a DM is to make the players happy, and not bog them down in reality. If it needs to be detailed in such a way, I will do it, but if it don't -- I wont.

Actually if you play Intelligence right as a character, it has a big effect on role-playing. INT of 3 is incredibly dumb. Why an 18 is incredibly intelligent. This is an interesting concept. However, your players may not like that idea. Since different races add different abilities, it may be best to give each human culture a few of their own.
